Chocolate Covered Peanut Butter Balls

This is a recipe for probably one of the most unhealthy desserts you could imagine--which of course makes it delicious. These chocolate covered peanut butter balls (or buckeyes) are usually a Christmastime treat, but I thought I would share the recipe now so you can be prepared in a few months ;). This recipe makes a crap-ton of these balls, so if you don't have a large crowd to please, you might consider cutting the recipe in half.

Ingredients:
3 lbs of powdered sugar
1 lb of margarine or butter
4 cups of peanut butter
3 packages of chocolate chips
1/3 cake paraffin wax (not 1/3 package; 1/3 of one of the cakes)

Combine the powdered sugar, margarine, and peanut butter in a LARGE bowl and mix them with your hands until everything is well blended (I tried to use a hand-mixer for this--DON'T do it. With as much powdered sugar as there is in this, it will fly EVERYWHERE). Roll the dough into balls and chill in refrigerator for half an hour.

Heat the chocolate chips and paraffin wax in a double boiler until they melt. Then, dip the balls into the melted chocolate and cool on parchment paper.

Store the peanut butter balls in the refrigerator and try not to eat them all in one sitting!

This recipe makes around 175-200 balls depending on how big you roll them (and how many you eat while making them). 

This is a perfect gift to bring to parties or to hand out to teachers, neighbors, and friends around the holidays. Enjoy!
